The Victoria City-County Health Department Environmental Health Division inspects places where food is served in Victoria, DeWitt, Jackson and Calhoun counties.

In the inspection reports, each violation in the Food Temperature/Time Requirements category is 5 demerits; in the Personnel/Handling/Source Requirements category, 4 demerits; and in the Facility and Equipment Requirements, 3 demerits. Zero is a perfect score, while 100 demerits is the worst possible score.

Each Wednesday, the Advocate publishes inspection results from the previous week. All demerits are reported, but only those in the categories of Food Temperature/Time Requirements and Personnel/Handling/Source Requirements are detailed.

FOOD SERVICE INSPECTIONS FOR WEEK ENDING FEB. 28

The New Rodeo, 407 E. Rio Grande St., Victoria. Demerits: 47. Improper cold-hold temperature. Wash hands in between tasks. Employee drinks need lids and straws. Cover food in the walk-in cooler. Use gloves but change them out in between different tasks. Store raw meat below eggs. Date-label food with a seven-day use-by date. Walk-in cooler not holding at 41 degrees. Keep paper towels at the hand sink. Address situation of rodent droppings in the back storage area. Store sanitizer rags in sanitizer bucket. Must not use rat poison or the over-the-counter sprays in establishment. Manager did not demonstrate knowledge. Wash dishes properly. Must wash, rinse and sanitize all dishes. Do not store dishes on the ground after washing them. Five facility or equipment violations.

French Elementary Cafeteria, 505 N. Henry St., Cuero. Demerits: 9. Improper cold-hold temperature. Discard any potentially hazardous foods more than 41 degrees for more than four hours.
